Cornish Spiced Apple Compote

Try this wonderful spiced apple puree served alongside turkey at Christmas. It also pairs well with festive ham on Gift Day.

Ingredients

  • Bramley apples5

    peeled and sliced

  • granulated sugar50g g
  • lemon1

    juiced

  • apple cider150ml ml
  • ground nutmegpinch of
  • clovepinch of
  • star anise1
  • Granny Smith apples7

    peeled and cubed

  • thyme sprigs2

    leaves collected

Step-by-step instructions

    Cook the Bramley apples, granulated sugar, lemon juice, 100 ml of cider and all the spices in a saucepan over medium heat, uncovered, for about 8‑10 minutes until soft. Remove the star anise.

    Blend to a puree, then return to the saucepan. Add the Granny Smith apples and simmer over low heat for 1 hour until soft but still slightly crisp. Store refrigerated for up to three days. To serve, reheat if chilled and stir in the thyme and remaining cider.
