Need something quick for dinner? Try this chicken, coated with aromatic za'atar and served with special chickpeas. It's simple but incredibly tasty.
Heat 1 tbsp oil in a pan over medium heat and sauté the onion and peppers for 7 minutes until they become soft and golden.
Meanwhile place the chicken between two sheets of parchment paper and gently pound to a thickness of about 2 cm. Mix the remaining oil with za'atar and rub the chicken with the mixture. Season to taste.
Preheat the grill to high heat. Place the chicken on a foil‑lined tray and grill 3‑4 minutes on each side until golden and fully cooked.
Heat the chickpeas in a pan with the harissa paste and 2 tbsp water until warmed, then roughly mash them with a potato masher. Soften the spinach in a pan with 1 tbsp water or in the microwave in a heat‑proof bowl. Add the pepper‑onion mixture, spinach and parsley to the chickpeas, stir. Serve with sliced chicken and lemon wedges for squeezing.
