Discovering black soybeans (low in carbs, high in fiber) was been a major find for my lowcarb menus! This hummus is seriously tasty, lower-carb or not.

Ingredients

4 serv.
  • cloves garlic, minced2 cloves
  • black soybeans1

    (15 ounce) can, drained

  • sour cream2 tablespoons
  • white onions or yellow onions, minced2 tablespoons
  • lemon juice3 tablespoons
  • tahini1 1⁄2 tablespoons
  • ground cumin1⁄2 teaspoon
  • cider vinegar1 teaspoon
  • cayenne1⁄8 teaspoon

    to taste

  • olive oil1 tablespoon
  • green onion1⁄4 cup

    finely chopped,for garnish

Step-by-step instructions

    Combine all ingredients, except the green onions, in a food processor to create a thick puree.

    Garnish with green onions.
