This sweet‑sour and spicy snack is perfect for sharing with friends – serve with chutney for extra flavor.

Ingredients

    cut into small cubes

  • rice crackers50g g

    e.g., Rice Krispies

  • green chili1

    finely chopped

  • bombay mix40g g
  • red onion1 small

    finely chopped

  • cucumber¼

    finely chopped

  • salted peanuts2 tbsp tbsp

    coarsely chopped

  • coriandersmall handful of

    finely chopped

  • chat masala½ tsp tsp
  • mustard oil (food grade)1 tbsp tbsp

    (optional)

  • tamarind chutney1 tbsp tbsp

    plus 1 tsp

  • lime½

    juiced

  • corianderlarge handful of

    coarsely chopped

  • mint leaves10

    coarsely chopped

  • garlic cloves3

    coarsely chopped

Step-by-step instructions

    Boil the potato in a small pot of boiling salted water for 7‑9 minutes until tender. Drain and cool, then finely chop.

    Blend the chutney ingredients together with 1 tsp salt and 3 tbsp water in a powerful blender until smooth. Set aside.

    In a large bowl combine the rice crackers, potato, green chili, bombay mix, red onion, cucumber, salted peanuts, coriander, chat masala, mustard oil (if using), 1 tbsp tamarind chutney and 2 tbsp green chutney. Mix well.

    Mix the remaining 1 tsp tamarind chutney with 1 tsp green chutney in a small bowl and season to taste with lime juice. Mix well. Portion the bhel puri into smaller serving bowls, serve with the tamarind chutney mixture and the remaining green chutney separately.
