We combined two of our favorite recipes to make bhaji in a bun. Serve with mango chutney and a fluffy brioche bun.

First, prepare the patties. Transfer all ingredients into a bowl, add a pinch of salt and combine with your fingers. Shape three patties and chill them in the refrigerator.
For the raita, grate the cucumber and squeeze out as much juice as possible. Transfer to a bowl with yogurt, mint, and a little salt. Mix and chill.
For the bhaji, sift flour, spices and leavening into a bowl with a pinch of salt. Gradually add 200 ml cold water to form a thick batter (you may not need all the water), then add the onion.
Heat oil in a large skillet. Add the batter in portions to make three bhajis the size of a patty. Fry for 3 minutes until crisp on one side, then flip and cook the other side until done. Keep warm.
Grill, grill pan or skillet – cook the patties to your liking. On each bun place lettuce leaf and a patty, then a spoonful of raita, bhaji and red onion. Serve the mango chutney on the side.
