Braised Beef Short Ribs in Barbecue Sauce with Green Apple Salsa and Crispy Fries

Juicy ribs, slowly braised in a flavorful barbecue sauce with hints of bourbon and chipotle, get a bright contrast from fresh green‑apple salsa. Serve them with crispy fries — and your lunch becomes a true celebration of flavor.

Ingredients

  • small onion1

    coarsely chopped

  • chipotle paste4 tbsp
  • sweet smoked paprika2 tsp
  • cayenne pepper1 tsp
  • canned crushed tomatoes400 g
  • tomato ketchup5 tbsp
  • barbecue sauce5 tbsp
  • sweet vinegar100 ml
  • brown sugar100 g
  • bourbon100 ml
  • 4 large or 8 smaller beef short ribs

  • beef stock cube1
  • handfuls of frozen thin french fries4

    prepared according to package instructions, served

  • juice of 1 lime
  • Granny Smith apples2

    quartered, cored, diced (and immediately mixed with lime juice)

Step-by-step instructions

    A day before cooking, place the first 10 ingredients in a food processor and blend into a smooth sauce. Transfer the ribs to a marinating bag (or a baking dish), pour the sauce over them and rub it thoroughly over the entire surface. Marinate in the refrigerator overnight.

    Preheat the oven to 160 °C (140 °C with convection/gas 3) and bring water to a boil. Transfer the ribs with the marinade into a large covered pot, add the beef stock, then pour enough boiling water so that it reaches the top of the ribs. Cover and braise for 4 hours until the meat is tender.

    Pour the remaining liquid into a large jug or bowl, let it stand so the fat rises to the top, skim off the foam and discard excess fat. Transfer the ribs to a baking dish, return the remaining liquid to the pot and reduce on the stove until it becomes a thick sauce. Pour the sauce over the ribs and stir to coat them well. The ribs can now be cooled and then refrigerated for up to 48 hours before final baking, or frozen.

    Preheat the oven to 180 °C (160 °C with convection/gas 4) and bake the ribs uncovered, turning them halfway through, for 1 hour until they become sticky, glazed on the outside and heated through.

    When the ribs are ready, cover the dish with foil to keep them warm while you prepare the fries. Make the salsa by mixing all the ingredients. Serve the ribs with the fries and a generous portion of salsa.
