Batta Harra: Aromatic Lebanese Spicy Potatoes

Ingredients

4 serv.
  • baking potatoes3‑4 великі

    (about 1 kg), peeled

  • olive oil6 tbsp

    (can be substituted with vegetable oil)

  • garlic cloves4

    minced

  • red chilli paste1 tsp
  • lemon1

    juice

  • corianderжменя

    chopped

Step-by-step instructions

    Cut the potatoes into cubes about 2.5 cm, then bring salted water in a pot to a boil and cook for 6‑8 minutes until tender. Drain and leave in a colander to steam dry for another 5 minutes.

    Preheat the oven to 200 °C (convection) or 180 °C (gas). Spread the potatoes on a parchment‑lined tray in a single layer. Drizzle with 4 tbsp olive oil and bake for 40 minutes until golden‑crisp. Alternatively, you can fry them in a deep fryer at 180 °C for 15‑20 minutes.

    When the potatoes are ready, heat the remaining 2 tbsp oil in a large skillet and sauté the garlic for 2 minutes until fragrant. Add the red chilli paste and cook for another 1 minute, stirring constantly.

    Transfer the roasted potatoes to the skillet, toss well to coat evenly with the sauce. Remove from heat, squeeze in lemon juice, sprinkle with chopped coriander and 1 tsp salt. Serve immediately while still hot.
