This aromatic fish, popular in Australia and the Far East, finally appeared in British supermarkets. Juicy barramundi baked with a warm bouquet of Moroccan spices will become the star of your dinner — try it and you'll understand why gourmets love it.
Place all the marinade ingredients in a food processor, add a pinch of salt and blend until smooth. On each side of the fish make three slits, brush half of the marinade onto it, then set aside and let it marinate for 30 minutes.
Preheat the oven to 220 °C (200 °C convection, gas mark 7). Place the fish on a tray, keeping the remaining marinade in a bowl, and bake for 20 minutes until the flesh is firm and the eyes turn white. After cooking, drizzle the fish with the remaining marinade.
Serve the barramundi with steamed couscous or fragrant rice, garnished with fresh cilantro and lemon wedges.
