For the patties, combine the ground beef, finely chopped red onion, minced garlic, parsley, tomato ketchup, oyster sauce, egg yolks and spices; mix well until the mixture is homogeneous. Divide it into 6 portions, shape balls and then flatten into patties. Place them in the refrigerator and chill for at least an hour (they can be prepared up to 2 days ahead).
Preheat the grill to high heat until the charcoal is blazing. No oil is needed. Place the patties on the grate and grill for a few minutes until the edges brown, then slide a spatula under and flip. Repeat once more. Move the patties to a cooler part of the grill and cook for another 15 minutes if you like them well done.
While the patties are cooking, grill the bacon and pineapple. When the bacon becomes crisp, place it on the cooked patties, add a slice of cheese and return them to the grill to melt the cheese. Optionally toast the buns as well to get a golden crust.
Spread mayonnaise on the bottom halves of the buns, place the patties on them, then add pineapple, marinated beetroot, tomato and lettuce leaves. Top with the bun tops and serve immediately.
