Warm crumble with apples, pears and walnuts

Traditional fruit‑nut crumble by Gerry Rhodes, baked in the oven for about an hour — aromatic, warm dessert for the family table.

Ingredients

  • apple500 г g

    peeled, cored, cut into large pieces

Step-by-step instructions

    Preheat the oven to 190 °C (170 °C convection, gas mark 5). In a large pot combine the sliced apples, grated lemon zest, rosemary (optional) and sugar. Add the lemon juice and simmer for 3–4 minutes. Then add the pears and cook another 2–3 minutes until the fruit softens. Transfer the fruit with its juice to a 1.7 L baking dish and spread evenly.

    For the crumble, pulse half of the walnuts in a food processor until they resemble ground almonds. Add the whole‑grain flour, cold butter and sugar, and mix until the mixture turns into a coarse crumb – to taste.

    Coarsely crush the remaining walnuts with your fingers and fold them into the crumble. Sprinkle the resulting mixture evenly over the fruit and bake for 20–25 minutes until the top turns golden‑brown. Serve hot with whipped cream or custard.
