These almond‑oat banana crepes are a great way to enjoy a healthy breakfast! My favorite simple yet sweet option for the morning.
Place the oats and almond flour in a food processor. Pulse for 30 seconds or until a flour‑like mixture forms. It should yield about 1 cup of this mixture.
Transfer to a large mixing bowl and add the flour. Add milk, egg, vanilla, brown sugar, and salt. Whisk for 20 seconds or until the batter is smooth and homogeneous.
Heat a large non‑stick skillet over low heat. Pour about 1/4 cup of batter onto the skillet. Gently swirl the batter to spread it thinly. Cook until the edges lift easily with a spatula. Carefully loosen the crepe around the edges and then the center until it releases from the pan; remove and set aside. Repeat with the remaining batter.
Fill the crepes with sliced bananas and any other toppings you like. I recommend almond butter, peanut butter, blueberries, strawberries, vanilla yogurt, cottage cheese, or ricotta. Drizzle with melted chocolate and serve warm or cold!
