Take a dish that fits in your air fryer and in 10 minutes prepare a fragrant, flavor‑rich curry — an ideal light dish for any evening.

served with chopped cilantro and 1 red chili, thinly sliced (optional)
Preheat the air fryer to 200 °C. Toss the sweet potatoes with oil and cook for 15 minutes, until they are almost softened.
Add the sliced onion and cook for another 5 minutes, until it becomes soft and slightly browned.
Transfer the sweet potato and onion mixture to a dish that fits the air fryer. Add the grated ginger and garlic, cook for 2 minutes, then stir in the curry paste and chickpeas. Fry for another 4–5 minutes, until the aroma develops.
Add the chopped tomatoes and cook for 8–12 minutes, until all vegetables are tender and the sauce thickens. If the sauce is too thick, thin it with a little water.
Serve the curry with boiled rice, sprinkled with chopped cilantro and thinly sliced red chili to taste.
