Ingredients

  • tablespoons butter2
  • cup chopped onion1⁄2
  • cup carrot, diced1⁄4
  • cup celery, diced1⁄4
  • cup flour1⁄3
  • teaspoon baking soda1⁄2
  • cups milk2
  • chopped parsley (optional)
  • (14 1/2 ounce) can chicken broth1
  • (8 ounce) package cold pack wisconsin sharp cheddar cheese1
  • teaspoons crushed red pepper flakes2

Step-by-step instructions

    In a medium saucepan melt butter.

    Add onion, carrots, and celery, cook until tender.

  3. 3

    Stir in flour, cook and stir 2-3 minutes or until bubbly.

    Stir in baking soda.

    Gradually stir in milk, and broth, bring to a boil, reduce heat and simmer, stirring until mixture thickens slightly, about 10-15 minutes.

    Add cheese, and red pepper, stirring until melted and well blended.

    Garnish with parsley.
