Hawaiian Cornish Hens

I don't like traditional stuffing, so this unique stuffing for the cornish hens caught my eye. We had this for Thanksgiving a couple years ago, one of my favorites!

Ingredients

  • Cornish hens6
  • salt and pepper, to taste
  • Glaze
  • honey1 cup
  • cinnamon1⁄2 teaspoon
  • light rum (optional)3 tablespoons

  • syrup from 1 30 oz can pineapple tidbits
  • soy sauce1⁄2 cup
  • plum jam1⁄4 cup
  • garlic powder1⁄8 teaspoon
  • chicken broth (for the pan)1 1⁄2 cups
  • Stuffing
  • chopped macadamia nuts1⁄2 cup
  • white raisins1⁄2 cup
  • mangoes (can be fresh or canned) or 2 peaches, cut into small chunks (can be fresh or canned)2
  • tablespoon brown sugar1
  • tablespoon soy sauce1
  • ounces pineapple tidbits, drained (save juice for glaze)30
  • tablespoons vinegar2
  • tablespoons plum jam2
  • teaspoon garlic powder1⁄8

Step-by-step instructions

    Preheat oven to 400°F.

    Combine stuffing ingredients in medium bowl.

  3. 3

    Wash and dry hens inside and out.

  4. 4

    Season with salt and pepper, to taste.

    Stuff birds with stuffing.

  6. 6

    Combine all glaze ingredients.

  7. 7

    Brush or rub birds thoroughly with glaze.

    Roast (breast down) in a baking pan at 400F for 45-50 minutes, brushing and basting the birds with glaze and pan juices frequently. Turn birds to brown evenly.

    Add 1 1/2 cups chicken broth to the pan juices and scrape pan well. Add any leftover glaze to this mixture.

    Baste hens.

    Lower oven temp to 325°F Roast for approximately 30 minutes more, or until juices run clear.
