Make these easy beef burritos for a simple weekday lunch. The meat filling also works great for a crunchy taco or as a light chili con carne with rice.

Heat the oil in a large pan – a cauldron works perfectly. Sauté the onion for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Add the ground beef, breaking it up, and fry for 5 mins, stirring, until browned. Add the sugar and leave for a minute, then pour in the vinegar and the tomatoes.
Simmer for 5 mins, then add the beans and the liquid from the can. Season, stir and simmer another 20 mins, until the beef is in a thick sauce. The sauce can be made up to 2 days ahead, cooled and reheated with a splash of water or frozen for 6 months.
To assemble the burritos, warm the tortillas according to the package instructions. Spoon a little rice and the beef sauce onto each tortilla and add your chosen fillings. Fold the ends and roll up to seal. If desired, secure with foil. Serve immediately.
