Crispy fried turkey mince in a chili, soy sauce and garlic sauce, served on udon noodles, creates a tasty 20‑minute low‑calorie but flavour‑rich dish.

Heat 1 tbsp oil in a large non‑stick pan over high heat. When the oil is hot, add the turkey mince and fry for 10‑12 minutes until golden‑brown and crispy, breaking up the meat with a wooden spoon while cooking. Add the ginger and garlic and cook for 1 minute. Stir in the honey, soy sauce and chili sauce, and cook for another 2 minutes.
Meanwhile, bring a large pot of water to a boil, add the noodles and cook according to the package instructions. Drain and toss the noodles with the remaining 1 tbsp oil and all the lime juice, then divide onto plates. Top with the crispy turkey mince, carrot, green onion and coriander. Serve with extra lime wedges for squeezing, if desired.
