Creole Meatballs

My husband wanted a spicy meatball and teases me for my zaar addiction and so he searches through my shelves of cookbooks. This dish is from 365 ways to cook hamburger by Doyne Nickerson and is absolutely delish, so I just add to share.

Ingredients

8 serv.
  • hamburger2 lbs
  • chopped onion1⁄4 cup
  • eggs, slightly beaten2
  • tomato juice1 cup
  • dry breadcrumbs1 cup
  • chili powder1 tablespoon
  • salt2 tablespoons

    try 1 tbsp first

  • thyme1⁄2 teaspoon
  • cayenne pepper1⁄3 teaspoon
  • msg1⁄2 teaspoon
  • flour
  • cooking oil1⁄3 cup
  • sliced onion1 cup
  • chopped green pepper3⁄4 cup
  • chopped celery1⁄2 cup
  • cups sliced mushrooms3
  • cups canned tomatoes5
  • crushed bay leaf1
  • teaspoon salt1
  • teaspoon cayenne pepper1⁄3
  • cup sweet wine1⁄4

Step-by-step instructions

    Mix first 10 ingredients and form into 1 inch meatballs.

    Roll in flour and set aside.

  3. 3

    In cooking fat, saute onions, green pepper, celery and mushrooms.

    Remove to large kettle.

  5. 5

    Brown meatballs in same pan, then add to kettle with remaining 5 ingredients.

    Cover and simmer 30 minutes.

    Thicken with 2 tbsp flour in 1/4 cup water.

    *(I have suggested using less salt in the meatballs since I found the dish to be on the salty side).
