Creamy ham, leek and mushroom spaghetti

This healthier pasta recipe uses low‑fat soft cheese to create a creamy sauce that coats the spaghetti.

Ingredients

4 serv.
  • olive oil2 tsp tsp
  • medium leeks2

    thinly sliced

  • chestnut mushrooms200g g

    sliced

  • garlic cloves2

    minced

  • spaghetti300g g
  • low-fat soft cheese140g g
  • thinly sliced smoked ham85g g

    shredded

  • basilsmall pack
  • grated parmesan25g g

Step-by-step instructions

    Heat the oil in a large pot. Add the leeks, 2 tbsp water and a pinch of seasoning, cover and cook for 5 minutes over medium heat until softened. Add the mushrooms and garlic, cook for another 3 minutes. Meanwhile, boil the spaghetti according to the package instructions, drain, reserving a little cooking liquid.

    Stir the soft cheese into the leek‑mushroom mixture, adding enough reserved pasta water to achieve a sauce‑like consistency. Add the ham, basil leaves and parmesan, then toss with the spaghetti.
