Quick to make on Christmas Day, you can replace fresh cranberries with frozen – just watch them while cooking, as they won’t break down as long.

Ingredients

  • muscovado sugar75g g
  • orange juice75ml ml
  • rosemary sprig1 large
  • frozen cranberries250g g

Step-by-step instructions

    Pour the sugar and orange juice into a saucepan over medium heat and bring to a boil. Add the rosemary sprig and stir in the cranberries. Simmer for 10 minutes until the berries are soft but retain their shape, and the sauce becomes sticky.

    Remove from heat and discard the rosemary sprig, then let cool and thicken slightly before serving. After cooling, store covered in the refrigerator for up to a week or freeze for a month. Thaw thoroughly before serving.
