Ingredients

  • red cabbage, thinly sliced1⁄4
  • white cabbage, thinly sliced1⁄4
  • red pepper, thinly sliced1
  • medium carrots, cut into thin matchsticks2
  • red onion, diced1
  • DRESSING
  • superfine sugar3 tablespoons
  • water1 tablespoon
  • cider vinegar3 tablespoons
  • vegetable oil1⁄2 cup
  • mustard seeds1 tablespoon
  • celery salt1⁄2 teaspoon
  • mustard powder1 teaspoon

Step-by-step instructions

    Soak the vegetables in iced water for 1 hour, drain and dry.

    Bring the dressing ingredients to the boil in a small pan.

    Cook for 1 minute until syrupy, then cool slightly.

    Add to the vegetables and mix well. Chill for 30 minutes.
