Christmas Pigs in Blankets Casserole

Use leftover bacon-wrapped sausages from Christmas together with carrots and parsnips to make this simple casserole. It's a great way to avoid festive food waste.

Ingredients

4 serv.
  • carrot2 medium

    (about 100g), cut into thick slices

  • parsnip2 small

    (about 80g), peeled, woody cores removed and cut into large pieces

  • red onion1

    cut into wedges

  • olive oil2 tsp tsp
  • bacon-wrapped sausages16 chipolata-sized

    or 8 larger

  • apple cider vinegar2 tsp wine or tsp
  • crème fraîche2-3 tbsp cream or tbsp

    (optional)

  • herbs2 tbsp дрібно нарізаної tbsp

    e.g., basil or parsley

  • mashed potatoes

    or leftover roasted potatoes (see tip), for serving

Step-by-step instructions

    Preheat the oven to 220°C/200°C fan/gas mark 7. Place the carrots, parsnip and onion in a deep roasting dish or casserole pot, drizzle with oil. Season well and roast for 20 minutes. Add the bacon-wrapped sausages and roast for another 10–15 minutes, or until the bacon is slightly browned.

    Reduce the oven temperature to 200°C/180°C fan/gas mark 6. Add the apple cider vinegar to the roasting dish. Cook for another 40 minutes. Taste and, if needed, adjust the seasoning. If using, stir in the crème fraîche and sprinkle with the chopped herbs. Serve with mashed potatoes or leftover roasted potatoes (see tip) for serving.
