Use seasonal cranberries to the fullest with a Christmas jam. Optionally add edible glitter to make it special – a wonderful gift for friends
Place a small plate in the refrigerator to chill. Transfer the cranberries, orange zest and juice, star anise, cinnamon stick, cloves and sugar into a heavy saucepan. Bring to a boil. Reduce heat and simmer for 30‑35 minutes, stirring frequently, until the cranberries swell and the liquid evaporates – it should become thick and jam‑like. Put a teaspoon of jam on the chilled plate and let it cool. After cooling, run a finger over the jam – if it wrinkles, it’s ready. If not, cook for another 5 minutes and check again.
Let it cool for 10 minutes, then remove the whole spices and, if desired, add the glitter, mixing well. Transfer into sterilized jam jars and seal with lids. Store in a cool, dark place for up to three months or in the refrigerator for up to one month after opening.
