Preheat the oven to its highest setting. For the fries, pour sunflower oil into a tray and place it in the oven for 15 minutes to heat up. Reduce the temperature to 220 °C/200 °C with convection/gas 8. Add the fries to the oil, stir to coat, and cook for 20 minutes. Add the Cajun seasoning and return to the oven for another 15 minutes until golden and crispy.
Meanwhile, prepare the mayo by mixing all ingredients in a bowl. Set aside.
For the chimichurri‑style sauce, whisk all ingredients until smooth, then season to taste. Set aside.
Heat a grill pan over high heat. Season the steaks only with salt (pepper may burn), place the steaks in the pan and cook 3 minutes per side for medium doneness. Remove from the pan, cover with foil and let rest for 10 minutes.
Slice the ciabatta buns in half, toast them in the same grill pan, cut side down, and spread chipotle mayo on each half. Slice the steak into strips, distribute between the buns, drizzle with chimichurri sauce and add some arugula. Serve with fries and any remaining mayo.
