Eggs fried on toast become special thanks to a few extra ingredients. A great dish for brunch, lunch or dinner, ready in just 15 minutes.
Heat 1 tbsp olive oil in a pan, add the leeks, garlic, chili and a pinch of seasoning and cook until the leeks are soft, about 6‑8 minutes.
When the leeks are almost done, push them to the side of the pan and fry the eggs in the remaining oil. Cooking over medium heat first sets the whites while keeping the yolk runny.
Toast the bread, then spread a little Greek yogurt on each slice, top with the leeks and squeeze lemon over. Add the fried egg, sprinkle with sea salt and a few extra chili slices before serving.
