Try our chicken‑sausage pasta for a mid‑week lunch – it’s tasty, quick and packed with veggies, with optional carrots, corn or peas for extra veg.

Ingredients

4 serv.
  • sunflower oil1 tbsp tbsp
  • onion1

    chopped

  • chicken sausage400g g

    sliced

  • large clove of garlic1

    minced or finely grated

  • roasted red pepper200g g

    sliced

  • ground cumin1 tsp tsp

    (optional)

  • chili flakes½ tsp tsp

    (optional)

  • canned chopped tomatoes400g g
  • spinach100g g
  • penne or rigatoni pasta500g g

Step-by-step instructions

    Heat the oil in a large lidded skillet or pot over medium heat and sauté the onion for 5 minutes until it begins to soften. Add the sausage pieces and fry for 4‑5 minutes until they start to brown. Add the garlic, pepper, cumin and chili if using, season well and stir. Cook another 2‑3 minutes until fragrant, then add the chopped tomatoes and half a can of water. Reduce heat to a gentle simmer and cook another 10‑15 minutes until the liquid reduces slightly and the sausage is cooked through. Add the spinach, stir, cover and cook another 3‑5 minutes until the spinach wilts, then stir again.

    Meanwhile, cook the pasta according to the package instructions. Drain, reserving a cup of the pasta water.

    Transfer the cooked pasta into the sauce and gently toss. Cook 2‑3 minutes, then add a splash of the reserved pasta water if the sauce needs thinning. Serve.
