Chicken helper, but homemade, adjustable and without preservatives!

Ingredients

  • chicken breasts1 1⁄2 - 2 lbs
  • (15 ounce) can black beans1

    drained (optional)

  • dry rice2 cups

    cooked

  • tomato paste4 ounces
  • milk1 1⁄2 cups
  • shredded cheddar cheese2 cups
  • butter or 3 tablespoons margarine3 tablespoons
  • milk1 1⁄2 cups
  • onion powder1⁄2 tablespoon
  • garlic powder1⁄2 tablespoon
  • sugar or 1 tablespoon stevia1 tablespoon
  • cayenne pepper1⁄2 teaspoon
  • cumin1⁄2 tablespoon
  • salt1 teaspoon
  • cornstarch1⁄2 tablespoon

Step-by-step instructions

    Dice and brown chicken breast in butter until cooked. Cook rice. Add sauce, black beans and tomato paste to pan of cooked chicken. Simmer until slightly thickened. Stir in grated cheese. Ladle chicken and sauce over rice and top with additional shredded cheese and sour cream as desired. (You may alternatively stir rice into the sauce and combine right away.).

    Rice: combine 2 cups white rice and 3 cups water, bring to a light boil. Cover and reduce heat to medium - low. Simmer covered 20 minutes or until all water is absorbed. Fluff with fork.
