Place a sieve in the sink and pour the beans into it. Let the liquid drain, rinse the beans under cold running water and drain well. Transfer the beans to a mixing bowl.
Mash the beans with a potato masher until a coarse texture is achieved.
Place the box grater on a cutting board and grate the cheese carefully. Add the cheese to the mashed beans.
Remove the papery outer skin from the green onions, leaving only the glossy parts. Use scissors to cut off the roots and about 2 cm from the other end. Slice the green onions into tiny pea‑size pieces. Add the green onions to the bowl.
Again use the scissors to chop the coriander into fine pieces. Don't forget the stems, as they hold a lot of flavor. Add the coriander to the bowl.
Take a measuring teaspoon, measure ¼ tsp ground cumin and ½ tsp smoked paprika, and add them to the bowl. Season the ingredients with salt and pepper and mix well.
Place a tortilla on the board. Take half of the bean mixture from the bowl and spread it on one half of the tortilla, covering only that side. Fold the tortilla like a book to enclose the filling and form a half‑moon. Repeat with the second tortilla and the remaining filling.
Heat a medium skillet on the stove. Place one tortilla in the pan, then reduce the heat to medium‑low. After 2 minutes, use a fish spatula to lift the tortilla and check the bottom. If it is golden‑brown, flip; if not, continue cooking, checking each minute until done. Carefully flip the tortilla with the spatula and cook another 2‑4 minutes on the other side until browned. Turn off the heat and transfer the quesadilla to a board. Use a pizza cutter or knife to cut it into wedges and serve.
