Coat cauliflower florets in a spicy sauce and serve with lentils and lettuce leaves for a healthy, aromatic and nutritious dinner.
Preheat the oven to 220 °C/200 °C with convection/gas 7. Grease and line a baking tray with non‑stick parchment. In a bowl, combine the flour, paprika and a pinch of salt, then whisk the yogurt and 50 ml water into a smooth batter. Add the cauliflower florets, stir to coat, and spread them evenly on the tray.
Bake for 20–25 minutes, stirring halfway through, until they become crisp and golden. In a skillet, heat the spicy sauce and 1 tsp honey, toss the cauliflower with this mixture, return it to the tray and cook for another 5–8 minutes.
Meanwhile, in a large bowl whisk most of the lime zest and all the juice, the remaining 1 tsp honey and 1 tbsp olive oil. Add the lettuce leaves and lentils, mix. Divide the mixture between two plates, top with the cauliflower wings and the remaining lime zest, if desired.
