Best Roasted Mushrooms

I love mushrooms! My fav is to roast a mix of mushrooms, white or brown button, portabella, shitake, oyster, no rules whatever is available. Roasting them caramelizes them and they soak in the great flavors of the oil and herbs. I serve them along side a steak or stir them into an Alfredo sauce to serve on your favorite pasta.

Ingredients

4 serv.
  • mixed fresh mushrooms2 lbs
  • garlic cloves2

    finely chopped

  • extra virgin olive oil1⁄2 cup
  • fresh rosemary1 teaspoon

    chopped

  • fresh sage1 teaspoon

    chopped

  • fresh parsley1⁄4 cup

    chopped

  • balsamic vinegar2 teaspoons
  • salt and pepper

Step-by-step instructions

    Oven 350.

    ~ Wipe mushrooms clean with damp cloth and chop no larger than 2 inch pieces (remember they shrink when cooked). Set aside.

    ~ In a bowl large enough to hold mushrooms combine oil, garlic, rosemary, sage, parsley vinegar, salt and pepper. Toss in mushrooms until well coated and pour into baking dish (9x9 works great) sprayed with cooking spray.

    ~ Bake for 30-40 minutes stirring occasionally.
