Beef and Red Pepper Burgers

Make these beef patties even tastier by adding extra vegetables such as carrot and roasted pepper. A simple way to boost flavor and increase vegetable intake.

Ingredients

  • red pepper1

    cut into quarters

  • olive oil2 tbsp tbsp
  • lean beef mince400g g
  • medium egg1
  • carrot1

    coarsely grated

  • stale breadcrumbs50g g
  • cheddar40g g

    thinly sliced

  • buns6floury

    cut in half

  • mayonnaise3 tbsp tbsp
  • cucumber¼

    or 1-2 mini cucumbers, sliced

Step-by-step instructions

    Preheat the oven to 200°C/180°C with convection/gas 6. Place the pepper on a tray and brush with 1/2 tbsp oil. Roast in the oven for 25‑30 minutes, turning once halfway through. Remove and let cool slightly, then finely chop.

    Transfer the mince, roasted pepper, egg, carrot and breadcrumbs into a large bowl and mix well. With your hands shape the mixture into six equal patties.

    Heat the remaining oil in a large heavy non‑stick skillet over medium heat. Fry the patties for 5‑6 minutes on each side until cooked through. Top with thin slices of cheddar. Spread mayonnaise on the buns, place the patties, and add cucumber slices on top.
