the most banana-y banana muffins i've ever had -- and the most tasty! particularly yummy with the topping from Geema's Banana Streusel Muffins (Recipe #55262).

Ingredients

12 serv.
  • ripe bananas, mashed4
  • white sugar1⁄4 cup
  • brown sugar1⁄4 cup
  • egg, slightly beaten1
  • melted butter1⁄3 cup
  • baking soda1 teaspoon
  • baking powder1 teaspoon
  • salt1⁄2 teaspoon
  • cinnamon1⁄2 teaspoon
  • flour1 1⁄2 cups
  • walnuts, chopped (optional)
  • chocolate chips (optional)

Step-by-step instructions

  1. 1

    Preheat oven to 350 degrees.

  2. 2

    Grease 12 muffin tins.

  3. 3

Mix the mashed banana, sugar, egg and margarine.

  4. 4

In a separate bowl, mix baking soda, baking powder, salt and flour. (I sift these together to make for a fluffier muffin, but it is not necessary).

  5. 5

Mix wet and dry ingredients all together until just mixed. Being careful not to over-stir!

  6. 6

Fold in walnuts or chocolate chips, if desired.

  7. 7

Pour or scoop batter into greased muffin tins.

  8. 8

Bake in 350 degrees oven for approximately 20 minutes.

  9. 9

Let cool slightly in tins, then remove carefully to a rack to cool completely.

  10. 10

    Enjoy!
