Warm cheese in a crust, topped with fragrant pears and crunchy walnut bread, will be the star after dinner – try it, and nothing will be the same again.
Preheat the oven to 220 °C (200 °C with convection, gas 7). Prepare the bread: in a large bowl combine wheat flour, wholegrain flour, salt, baking soda and coarsely chopped walnuts. Add the buttermilk, olive oil and gradually pour in the milk until you obtain a very soft, sticky dough.
Dust the tray with wholegrain flour, place the dough and shape a round, slightly flat loaf. Sprinkle it with a little more flour, make several cuts on top and bake for 30–35 minutes until it rises, becomes golden‑crusty and is fully baked; tapping the bottom should sound hollow.
Allow the bread to cool slightly (or leave it completely cooled if made ahead). While the bread cools, prepare the cheese. Open the cheese package, return it to its box and tie the lid with string so it doesn’t melt in the oven. Drizzle the cheese with a few drops of walnut oil, season to taste and bake for 10 minutes. Serve with slices of warm walnut loaf and thinly sliced pears.
