Avocado, Cucumber and Grapefruit Salad

This avocado, cucumber and grapefruit salad is delicate, refreshing and crunchy, with smoked almonds and a honey vinaigrette. Perfect for lunch!

Ingredients

4 serv.
  • cucumbers, diced, seedless (about 2 cups)2
  • grapefruit or oranges, peeled and sliced (about 2 cups)3
  • avocado, diced (about 1 1/2 cups)2
  • almonds, sliced (I used smoked almonds)0.33333333333333 cup
  • fresh mint, chopped2 tablespoon
  • fresh shiso leaves, sliced3
  • vinegar (you can also use lime or lemon juice)1 tablespoon
  • honey1.5 tablespoon
  • olive oil1.5 tablespoon
  • salt to taste
  • grapefruit or orange zest to taste

Step-by-step instructions

    Wash, cut, and gently toss the cucumbers, grapefruit, almonds, mint, and shiso leaves.

    Whisk the dressing ingredients with a whisk. Taste and adjust seasoning. Drizzle the dressing over the salad ingredients. Chill before serving.

    Just before serving, gently fold the avocado pieces into the salad. Garnish with extra herbs or almonds.
