Tender eggplant in a fragrant sauce with lemongrass, coconut milk and spicy notes – a true Thai exotic on your plate.

In a blender, briefly pulse the chilies, garlic, ginger and lemongrass into a coarse paste; set aside. Mix the turmeric and chili powder and coat the eggplant wedges with this mixture.
Heat olive oil in a skillet, sauté the eggplant until golden, remove and set aside. In the same skillet, sauté the prepared paste with sugar and shallots for a few minutes, then return the eggplant. Add the Thai fish sauce, coconut milk and vegetable broth (or water), stir well and bring to a boil. Reduce heat and simmer until the eggplant is tender but not falling apart, about 15 minutes. Season to taste, sprinkle with cilantro and serve hot with steamed rice or bread to soak up the sauce.
