A light spring frittata that combines tender new potatoes, crisp asparagus and aromatic cheddar — ready in 20 minutes and perfect for a quick lunch or dinner.
Preheat the grill to high heat. Place a pot of cold salted water, add the new potatoes and bring to a boil. When the water boils, cook for 4–5 minutes until the potatoes are almost tender, then add the asparagus and cook for another 1 minute. Drain.
While the vegetables are cooking, heat the olive oil in a large heat‑proof skillet, add the finely chopped onion and sauté for 8 minutes until it becomes translucent and soft.
In a bowl whisk the eggs with half of the grated cheddar, season with salt and black pepper. Pour the egg mixture into the skillet, evenly distribute the potatoes and asparagus, sprinkle the remaining cheese. Place the skillet under the grill for 5 minutes until the top is browned and the frittata sets.
Remove the skillet from the grill, cut the cooked frittata into portions and serve immediately, garnished with arugula leaves or a mixed green.
