A light vegetarian dinner that sparkles with ginger, garlic and sesame aromas. Marinated tofu, crisp noodles and fresh vegetables create a true flavor symphony — all ready in 25 minutes!

Prepare the marinade by mixing soy sauce (or tamari), lemon (or lime) juice, grated ginger, finely chopped garlic and 1 tsp sesame oil. Place tofu cubes on several sheets of kitchen paper, cover with more sheets and press with a heavy object (e.g., a pan). Let sit at least 15 minutes, then transfer tofu to the bowl with the marinade, cover and marinate for another 30 minutes to 1 hour.
While the tofu marinates, cook the rice vermicelli according to the package instructions. Drain and quickly rinse the noodles with cold water to stop cooking.
Heat a non‑stick pan over medium heat, add the marinated tofu cubes and fry until golden and crisp. A few seconds before removing the tofu, pour in the remaining marinade and let it sizzle for 10 seconds. Transfer the tofu to a plate and cover with foil to keep warm.
In the same pan (or wok) heat 2 tsp rapeseed oil and 1 tsp sesame oil over high heat. Add sliced green onion, another finely chopped garlic, half of the seedless red chili and grated ginger; stir constantly for about 1 minute. Add sugar snap peas, pak choi and sliced red pepper, stir‑fry for another 1‑2 minutes. Then stir in the cooked noodles, add 1 tsp soy sauce (or tamari) and the juice of half a lime, toss quickly until homogeneous, until the pan sizzles.
Remove the pan from heat, divide the mixture between two plates, place the fried tofu cubes on each, drizzle with the remaining sauce, sprinkle with finely chopped cilantro and serve immediately.
