Pour the broth into a large pot, add the ginger, star anise, cinnamon stick and cloves, bring to a gentle boil and let steep for 10 minutes.
Place the rice noodles in a separate bowl, cover with hot water according to the package instructions, then drain the excess liquid and rinse quickly.
Add fish sauce and the juice of one lime to the broth, taste and, if needed, adjust — add more sauce or lime juice.
Divide the cooked noodles among four deep bowls, top with shredded roasted turkey, bean sprouts, cilantro leaves, mint, sliced green onions and sliced chilies.
Pour the hot broth over the noodles, serve with wedges of the second lime and extra fresh herbs to taste.
