Prepare the vegetables: slice the cucumber and carrot with a spiralizer or into thin strips, slice the green onion thinly, and tear the lettuce leaves into large pieces.
In a large bowl combine the sliced cucumber, carrot, lettuce leaves, green onion, and pieces of roasted chicken.
Make the dressing: in a jar with a lid combine soy sauce, rice vinegar, sesame oil, grated ginger, sugar and a pinch of sesame seeds; shake well.
Drizzle the dressing over the salad and toss gently so all ingredients are evenly coated.
Divide the salad into two lunch boxes or serve immediately. Sprinkle with the remaining sesame seeds before serving.
