Apple Mustard Pork Burgers

A light dinner for two that combines a juicy pork patty, fragrant apple and piquant mustard. Serve with creamy tzatziki and fresh arugula – just like a real bistro!

Ingredients

2 serv.
  • new potatoes250 g

    cut in half if large

  • small edible apple

    cut into quarters, remove core and grate

  • ground pork250 g
  • green onion2

    trim and finely chop

  • breadcrumbs2 tbsp
  • wholegrain mustard2 tsp
  • small pack of parsley¼

    trim and finely chop

  • egg1

    beaten

  • tzatziki2 tbsp
  • arugula

    for serving (optional)

Step-by-step instructions

    Heat the grill or pan to medium‑high temperature. Boil the potatoes for 20‑25 minutes until they become tender.

    While the potatoes are cooking, grate the apple (after removing the core) and squeeze out excess juice. In a large bowl combine the grated apple, ground pork, finely chopped green onion, breadcrumbs, mustard, parsley and half of the beaten egg. Mix thoroughly with water‑moistened hands until the mixture is homogeneous. Shape it into two patties.

    Place the patties on a sheet of foil and grill for 18‑20 minutes, turning once, until they are browned.

    Drain the cooked potatoes, quickly toss them with tzatziki and serve alongside the patties, sprinkling with arugula if desired.
