This green rice is my FAVORITE! It's packed with spinach and cilantro, perfectly zesty, nutritious and goes with almost anything.

1 teaspoon salt, if water is used
up to 2 1/2 cups for stickier rice
Prepare the rice: rinse the rice thoroughly in a metal colander. Shake it a few times to remove excess water, or pat dry with a paper towel. (This prevents splattering in oil when you add it to the pan in step 3.)
Prepare the green herb mixture: finely chop cilantro, spinach, shallot, serrano pepper, and garlic in a food processor until very fine.
Sauté the rice: Add olive oil to a pan over medium‑high heat. Add the rice and sauté for 3‑5 minutes until lightly browned. Add the herb mixture and salt; sauté another 3‑5 minutes until fragrant.
Cook the rice: Add broth or water, bring to a boil. Cover and simmer on low heat for about 15 minutes. Check the rice, fluff with a fork; if needed add more water or cook longer. When the rice reaches desired doneness, remove from heat and fluff with a fork to distribute the greens.
Done! Enjoy! Serve with chicken skewers, chicken or salmon fried in a deep fryer, tacos, beans, and creamy corn, etc.
