White fish fillet, aromatic prosciutto, fresh vegetables and a hint of chili—quickly cooked in a single pan for a light yet refined Mediterranean‑style dinner.
Tear each slice of prosciutto in half. In a large skillet, heat a little oil, add the prosciutto and quickly fry until crisp, then remove it to a plate.
In the same skillet, add a little more oil if needed and heat. Add the red bell pepper, red onion and garlic, cook over low heat, stirring occasionally, for about 10 minutes until the vegetables soften.
Add the artichoke hearts, black olives, chili paste and a splash of white wine, season to taste and cook for a few more minutes so the flavors meld.
Season the prepared fish with salt and pepper, place it over the vegetables, tightly cover the skillet with a lid and cook for 5–6 minutes until the fish is cooked through and tender.
Return the fried prosciutto, scatter it over the dish and serve with crusty bread.
