Juicy turkey breast fillet tightly wrapped in aromatic bacon and filled with a mixture of pistachios, cranberries, minced sausages and fresh parsley — a true gastronomic journey. Heat the olive oil in a small pan over medium heat, cover and simmer the onion and rosemary for 15 minutes until soft. Transfer to a bowl, let cool. When cooled, add the pistachio crumbs, bread crumbs, dried cranberries, minced sausages, parsley leaves and beaten egg. Mix until homogeneous.
Place the turkey fillet skin‑side down on a board, cover with parchment and gently pound with a meat mallet or rolling pin to an even thickness. Remove the parchment, spoon most of the filling into the centre of the fillet. Roll the fillet tightly around the filling so it is fully sealed. Shape the remaining filling into small balls.
On a large sheet of parchment lay out six strips of kitchen twine, spaced about 5 cm apart. Along each strip of bacon, run the back of a knife, stretching and flattening it. Arrange the bacon in a lattice over the twine and parchment. Place the turkey roll skin‑side down on the bacon and lift the strips, wrapping them around it so the bacon fully encases the roll. Tie the twine to secure the roll.
Wrap the roll in parchment, twist the ends, and chill in the refrigerator for at least 2 hours, up to 48 hours.
Preheat the air fryer to 180 °C for 3 minutes. Remove the parchment and transfer the roll to the basket. Cook for 30 minutes, then carefully flip and cook another 20 minutes. Check the internal temperature – the thickest part should reach 70 °C. If lower, return the roll to the air fryer and cook another 10 minutes until the required temperature is reached. Let rest for 20 minutes.
While the roll rests, place the formed filling balls in the air fryer and bake for 15 minutes until golden. Remove the twine from the turkey, slice and serve on a large platter, garnished with rosemary sprigs.
