peeled
juice (other half reserved for nachos)
(optional)
drained and rinsed
juice
grated
or whole mozzarella, torn
coarsely chopped (optional)
Coarsely grate the tomatoes in a bowl, removing the skin, then grate the onion. Add olive oil, lime juice and chili powder (optional) and a pinch of salt, mix and set aside. The salsa can be prepared a day ahead and stored in the refrigerator.
Transfer the beans to a bowl, add the Cajun or fajita seasoning and the remaining lime juice, then roughly mash with a masher. Line the air‑fryer basket with parchment baking paper. Layer half of the tortilla chips, then half of the beans and half of the cheese, then repeat the layers.
Cook in the air fryer at 200 °C for 8–10 minutes, until the cheese melts, turns golden and slightly browned. Using the edges of the parchment, lift the nachos onto a plate, drizzle with half of the tomato salsa and sprinkle with cilantro (optional). Serve the remaining salsa on the side.
