Preheat the air fryer to 200 °C. Place the bacon in a small non‑stick baking dish (or in two separate dishes if needed) and cook for 5–7 minutes until it turns golden while remaining soft. Transfer the bacon to a paper‑towel‑lined plate to drain excess fat, then grease the dish with olive oil (or distribute the oil between the two dishes).
Meanwhile, in a large bowl whisk the eggs, add the torn‑into‑small breadcrumbs, parsley, chili flakes (optional), most of the cheese and a pinch of spices, and mix thoroughly.
Lower the air fryer temperature to 170 °C. Pour the egg mixture into the prepared dish(es) and cook for 8–12 minutes until the frittata is golden and fully set.
Coarsely chop the cooked bacon and sprinkle it over the frittata together with the remaining cheese. Return to the air fryer for another 1–2 minutes until the cheese melts. Garnish with fresh parsley and serve.
