Ingredients

  • butter or 1/4 cup margarine1⁄4 cup
  • onions2 tablespoons

    finely chopped

  • cooked turkey2 cups

    chopped

  • raw potatoes2 cups

    diced

  • celery1⁄2 cup

    diced

  • turkey broth2 cups
  • cream-style corn1 cup
  • half-and-half cream2 cups
  • salt1 teaspoon
  • paprika1⁄4 teaspoon
  • ginger1⁄4 teaspoon
  • pepper1⁄8 teaspoon
  • parsley2 tablespoons

    chopped

Step-by-step instructions

    In a large soup pot, sauté onions in melted butter.

    Add turkey, potatoes, celery and broth.

    Simmer until vegetables are tender-crisp.

    Add corn, cream and seasonings.

    Heat thoroughly, stirring occasionally.

    Garnish with parsley and serve with crusty rolls.
