Turkey Meatballs in Tomato Sauce

This is a healthier and lighter version of traditional Italian meatballs, without sacrificing any great flavours! This is of course, one of my favorites. Courtesy of Giada de Laurentiis.

Ingredients

4 serv.
  • breadcrumbs1⁄4 cup
  • chopped flat leaf parsley1⁄4 cup
  • large eggs2

    lightly beaten

  • whole milk2 tablespoons
  • grated romano cheese3⁄4 cup
  • salt3⁄4 teaspoon
  • fresh ground black pepper3⁄4 teaspoon
  • ground turkey (dark meat)1 lb
  • olive oil1⁄4 cup
  • tomato sauce or other pasta sauce5 cups

Step-by-step instructions

    Mix together bread crumbs,parsley, eggs, milk, 1/2 cup of the cheese, salt and pepper.

    Add ground turkey, stir gently to combine. Be careful not to overwork the meat.

    Shape into bite size balls.

  4. 4

    Heat oil in a large skiller under medium high heat.

  5. 5

    Add meatballs until browned, about 3 minutes.

  6. 6

    Add tomato sauce and bring to a boil.

  7. 7

    Reduce heat and simmer, about 5 minutes.

  8. 8

    Sprinkle remaining cheese on top.
