Ingredients

6 serv.
  • cucumbers, peeled and cut in half3
  • cup tomatoes, chopped1 cup
  • onion, peeled and minced1
  • cups cooked chicken, minced1 1⁄2 cups
  • tablespoon ketchup1 tablespoon
  • teaspoon salt1 teaspoon
  • teaspoon pepper1⁄4 teaspoon
  • paprika
  • tablespoon butter1 tablespoon
  • tablespoon flour1 tablespoon
  • cup milk1 cup
  • breadcrumbs, buttered and browned

Step-by-step instructions

    Scoop pulp from middle of cucumbers, reserve pulp.

    Salt shells lightly and place close together in a buttered pan.

  3. 3

    Mix pulp with tomato, onion, chicken and seasonings.

  4. 4

    Melt butter and add flour, stirring until smooth.

  5. 5

    Add milk and cook, stirring constantly until thickened.

    Add to pulp mixture and fill cucumber shells.

  7. 7

    Bake at 350F for 20 to 25 minutes.

    Sprinkle buttered crumbs evenly over the top and serve.
