Shrimp Sauce Piquant

Ingredients

  • shrimp2 lbs

    peeled and deveined

  • onions4

    finely chopped

  • bell peppers3

    finely chopped

  • green onions1 1⁄2 cups

    chopped

  • parsley1 1⁄2 cups

    chipped

  • oil1⁄2 cup
  • tomato paste1 ounce
  • tomatoes and green chilies1 ounce
  • sugar1 pinch
  • water1 cup
  • salt and black pepper
  • cayenne pepper

Step-by-step instructions

    Saute onions, bell peppers, 1/2 of the green onions and 1/2 of the parsley in oil until onions are transparent; add tomato paste, tomatoes with chilies, sugar and water and cook on low heat for 3 to 4 hours.

    Add shrimp, remaining green onions, parsley, slat and cayenne pepper; continue to cook for about 20 minutes.

    Serve over cooked rice.
