Ingredients

2 serv.
  • uncooked angel hair pasta4 ounces
  • large shrimp, peeled and deveined8
  • fresh asparagus spears, cut into 2-inch pieces6
  • cloves garlic, minced12
  • olive oil1⁄4 cup
  • sliced fresh mushrooms1⁄2 cup
  • chicken broth1⁄2 cup
  • small plum tomato, peeled,seeded and diced1
  • salt1⁄4 teaspoon
  • crushed red pepper flakes1⁄8 teaspoon
  • minced fresh basil1 tablespoon
  • minced fresh oregano1 tablespoon
  • minced fresh thyme1 tablespoon
  • minced fresh parsley1 tablespoon
  • grated parmesan cheese1⁄4 cup

Step-by-step instructions

    Cook pasta according to package directions.

    Meanwhile, in a large skillet, saute the shrimp, asparagus and garlic in oil for 3-4 minutes or until shrimp turn pink.

    Add the mushrooms, broth, tomato, salt and pepper flakes; simmer, uncovered, for 2 minutes.

    Drain pasta.

    Add the pasta and seasonings to skillet; toss to coat.

    Sprinkle with Parmesan cheese.
