Shrimp Marinara over Pasta

My take on an old-style Italian Restaurant favorite

Ingredients

2 serv.
  • linguine8 ounces
  • olive oil1 tablespoon
  • minced garlic1 teaspoon
  • dried oregano1⁄2 teaspoon
  • dried basil1⁄2 teaspoon
  • crushed red pepper flakes1⁄4 teaspoon
  • diced tomatoes, undrained1 can

    (15 ounce)

  • fresh ground black pepper1⁄4 teaspoon
  • large shrimp, peeled and deveined3⁄4 lb
  • salt

Step-by-step instructions

    In a 10 inch skillet, heat oil over medium heat. Add garlic and saute for about one minute.

    Add herbs and seasonings, allowing dried herbs to "bloom" in the oil for a few seconds. Add the tomatoes and their juices.

    Stir and taste for seasoning. Bring tomatoes to a simmer, cover, and simmer over medium-low heat while pasta cooks, about 10 minutes or so.

    Meanwhile, cook pasta according to package directions.

    About five minutes before you are ready to serve, stir the shrimp into the tomato sauce and cook until shrimp are pink and firm, about 5 minutes.

    Divide drained pasta into two pasta bowls and spoon sauce over pasta. Serve at once.
